Easy Vegan Yogurt Ranch Dressing

This plate was prepared for Valentine’s Day, as probably seems all too obvious. Now a week out, my flowers are fading but still carrying an air of abundance about them. And I’m enjoying the loving touches that are evergreen.

Valentine's Day is for fun, but love is forever, and the best kind offers genuine nurturing and nourishment. I love how something as simple as cutting vegetables into heart shapes broadens smiles and adds allure to healthy snack plates, no matter how big kids get--especially when paired with something snackable and savory (like crisp, intentionally bite-sized, gluten-free Humble Seed crackers). Cap it off with a creamy vegan yogurt ranch dressing and the result is golden.

I never was a fan of ranch dressing before, but this vegan condiment/soup topper/spread I do like. It’s crazy how many vegan versions of foods that I never cared for pre-vegan have really grabbed my taste buds—egg(less) salad, tempeh bacon, and carrot dogs to name a few…but this post is about ranch dressing.

One of my favorite things about this is that it’s another no-recipe-needed blend. Aren’t those intuituve would be recipes such a relief sometimes? Just mix plain unsweetened plant yogurt with a good shake of herbs and spices (fresh parsley, dried dill, garlic powder, onion powder, and paprika), a little splash of lemon juice and apple cider vinegar (roughly a teaspoon each per cup yogurt), and sea salt and pepper. Easy and creamy--no recipe needed!

Vegan Ranch Dressing
Yield: Just over 1 cup

1 Cup dairy free plain unsweetened yogurt such as Kite Hill
1 Teaspoon dried dill
½ Teaspoon garlic powder
½ Teaspoon onion powder
¼ Teaspoon paprika
1 Teaspoon fresh lemon juice
1 ½ Teaspoons apple cider vinegar
Sea salt and fresh ground pepper to taste
⅓ Cup finely chopped parsley

Use a fork or whisk to mix all the ingredients together in a bowl until fully combined. Store leftovers in the fridge for up to a week (or less, according to the expiration date of the yogurt). Enjoy!
